Born in Nicaragua and raised in Miami, David Caceres brings over 20 years of culinary expertise to The Gale Miami. His passion for food was ignited during his high school years in Coral Gables, where he started as a runner at Gables Diner and quickly worked his way into the kitchen. By his sophomore year, he became the ‘Culinary Trainer,’ eventually assisting the kitchen manager by his senior year. This early experience solidified his love for the culinary arts, guiding his journey through some of the most prestigious hotels and restaurants in the country.
David’s diverse career includes stints at celebrated luxury properties like The Edition, Four Seasons, St. Regis Bal Harbour, and 1 Hotel South Beach, where he honed his craft and expanded his culinary repertoire. He also fell in love with the bold flavors of smoked BBQ cuisine during his time in Houston, Texas, a passion that continues to influence his approach in the kitchen. Notably, David was part of the opening team at Sexy Fish Miami and most recently served as Executive Chef at The Mayfair House Hotel & Garden.
In July 2024, he joined The Gale Miami as Executive Sous Chef, overseeing all culinary operations, on property, including Casa Gianna, an upcoming Mediterranean Steakhouse concept, banquets, and more. Chef Caceres is currently dedicated to designing innovative menus, building strong culinary frameworks, and guiding his team through the launch of new dining concepts. David’s culinary vision is driven by the belief that food has the power to evoke memories and transform a person’s day. With his extensive experience and innovative approach, he leads The Gale’s culinary team in crafting memorable dining experiences across all food & beverage outlets on property.
